04:43 pm - Italian Ravioli Casserole
This is one of my favorite things to make. It's quite yummy and if you are a pasta lover like myself, then you should enjoy this.

Italian Ravioli Casserole
2 (9 ounce) packages fresh reduced-fat cheese ravioli.
1 (6 ounce) package fresh spinach (about 6 cups)
1 (26 ounce) bottle tomato basil pasta sauce (such as Classico)
½ teaspoon crushed red pepper (optional)
1 cup (4 ounces) shredded Asiago cheese, divided.
¼ cup thinly sliced fresh basil.

Preheat oven to 375 degrees. Cook ravioli in boiling water for 3 minutes, omitting salt and fat. Stir in spinach until wilted. Drain. Combine pasta sauce and pepper. Spoon 1 ½ cups sauce mixture in the bottom of an 11x7 inch baking dish. Spoon half of the ravioli mixture over sauce. Top with ½ cup cheese. Spoon remaining ravioli mixture over cheese. Top with remaining sauce. Cover with foil and bake for 25 minutes. Remove foil; sprinkle with ½ cup cheese. Bake, uncovered for an additional five minutes or until cheese melts. Garnish with basil.

09:51 am - Banana Pancakes
I made banana pancakes this past week-end. They were pretty tasty but a little dense.

4 mushy bananas (mashed through a colander)
1 egg
1 cup soy milk
1 cup wheat (or white) flour (sifted with the next 2 items)
2 tsp baking powder
1/2 tsp salt

It took me a while to get the bananas through the colander but it was well worth it when you consider there is no oil in the recipe.

Heat a greased skilet and pour small oblong cakes. Sprinkle with cinnamon to your liking.

It made more than enough for two people and I had leftovers for 2-3 more servings. Yah, for homemade pancakes before heading off to work. I like to reheat them in the toaster oven to make them a little crispy.

Hi Everyone!!! Welcome to the recipe swap. This community was created so that we can share various recipes. Here's one that I tried tonight with dinner.

Parmesan Potatoes


4 medium baking potatoes
1 stick butter, divided in half
1 cup all purpose flour
1 cup Parmesan grated cheese
1 tablespoon seasoning salt
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon black pepper


1. Pre-cook potatoes in microwave for 5 minutes. Cut into 4 wedges each, lengthwise.

2. Preheat oven to 400 degrees.

3. Melt one half stick butter in 9x13 inch baking pan in the oven.

4. Mix dry ingredients in a bowl. In a separate bowl, add milk and dip wedges first in milk then in flour mixture.

5. Bake 30 minutes turning after 15 minutes.

**Great with ranch dressing to dip in.**
