This is the best potato salad I've ever had & I'm not just saying that because I made it. I found it on the Wild Oats website.
Herbed Potato Salad
Prep time: 30 minutes, Chill time: 2 hours, Serves 4-6
8 red potatoes, boiled and cut into 1/8 chunks
3/4 cup Italian salad dressing (we used a light version)
1 yellow onion, diced
1 cup celery, diced
2 cups kosher dill pickles, diced
1/2 cup diced green pepper (I added this item myself)
Salt and pepper to taste
6 eggs, hard boiled and diced
1/4 cup yellow mustard
1/2 cup mayonnaise
1 Tb fresh parsley, finely diced
1 Tb fresh basil, finely diced
1 Tb paprika
Combine potatoes, Italian salad dressing, onion, celery, pickles, salt and pepper. Cover and refrigerate for 2 hours.
Afterwards, add eggs, mustard, mayonnaise and mix well. Finish by sprinkling with fresh herbs. Garnish with fresh dill if desired.
